ENJITOMATADAS (ENCHILADAS DRENCHED IN SALSA POPOTLA)

Ingredients

½ kg of tortillas

225 g of Salsa Popotla (mild) by Tortilla Maker 

½ kg of shredded or grated cheese (cheddar, mozzarella) mixed with 2 finely-chopped white onions

¼ L of sour cream

vegetable oil


Preparation

  1. Prepared with Salsa Popotla (homemade tomato sauce) by Tortilla Maker 
  2. Put a spoonful of vegetable oil in a frying pan and fry the Salsa Popotla
  3. In a separate pan, lightly fry the corn tortillas (make sure they are soft enough to fold)
  4. Once lightly fried, remove them from the pan and fill them with the cheese and onion mix (prepared in advance), pour the fried Salsa Popotla, then fold the tortillas in half
  5. Top them off with sour cream

 

*Can be served with fries, rice, fried beans, avocado and shredded lettuce

*Salsa Popotla can also be used to prepare tomato sauce-based soups and pasta dishes. Yum!
